ASHURE: PERFECT PRE-WORKOUT SNACK


Ashure is a Turkish dessert also known as Noah’s Pudding. Legend has it that Noah had spent weeks on the ark. His water and food supplies had dwindled, so he decided to throw bits of everything he had left on the ship into one pot. The result is a wonderful dessert which happens to be a perfect pre workout snack. Most traditional recipe sites suggest that you pour 3 cups of sugar into the pudding! Of course we are not adding any sugar at all. Our Ashure contains legumes, whole grains, fresh and dried fruits as well as nuts. But basically anything goes – feel free to empty your cupboards and experiment!

Here are the ingredients you need for six portions:

2 cups whole grain wheat or barley

2 cups chickpeas

2 oranges

1 cup dried apricots

1 cup dried raisins

1 pomegranate

1 liter water

1 handful roasted chickpeas

1 handful hazelnuts

cinnamon powder

The night before, soak the wheat and the chickpeas in water. I suggest you make it a little more since it is always great to sprinkle chickpeas or wheat on top of your salad or müsli. In the morning, bring the chickpeas to a boil and cook for them for half an hour. Transfer two cups to a big pan and add the wheat, water and raisins. Wash the two oranges thoroughly before you grate the zest and squeeze the juice. Cut the apricots in chunks and cook the pudding for about 40 minutes until most the liquid has been absorbed.

Cut the top and bottom off the pomegranate before you slice the fruit in two halves. Fill a bowl with water and remove the seeds under water to avoid stains all over your clothes and kitchen counter.

Let the Ashure cool down before you distribute it in serving bowls. Color your pudding with the pomegranate, roasted chickpeas and hazelnuts and don’t forget the splash of cinnamon for the perfect finish.
